Strawberry Banana Cake (Gluten-Free & Naturally Sweetened)

A soft, wholesome cake made with ripe bananas, juicy strawberries, and naturally sweetened with pure maple syrup and coconut sugar. This simple recipe is gluten-free, dairy-free, and perfect for anyone looking for a healthier homemade treat.
Ingredients
3 ripe bananas, mashed
¼ cup pure maple syrup
⅓ cup coconut sugar
1 tsp alcohol-free vanilla extract or vanilla powder
½ tsp cinnamon
⅓ cup water
2¼ cups gluten-free oat flour
½–1 cup fresh or frozen strawberries, chopped
A few extra fresh strawberries, sliced, for decoration
Optional (for a lighter, more risen cake):
1 tsp baking powder
¼ tsp baking soda

Method
Preheat your oven to 180°C (350°F) and lightly grease or line a loaf tin or small cake tin.
In a large bowl, mash the bananas until smooth.
Add the maple syrup, coconut sugar, vanilla, cinnamon, and water. Stir until well combined.
Fold in the oat flour and mix until a smooth batter forms.
Gently fold through the strawberries.
Pour the batter into the prepared tin and smooth the top.
Decorate with a few slices of fresh strawberry.
Bake for approximately 40–50 minutes, or until golden on top and a skewer inserted into the centre comes out clean.
Allow to cool before slicing and serving.

Notes
The cake is naturally moist thanks to the bananas and strawberries.
Baking powder and baking soda are optional but will create a lighter texture and help the cake rise more.
Store in an airtight container in the refrigerator for up to 4 days.
