Blueberry & Apple Oat Pancakes

Simple ingredients. Natural sweetness. Nourishment in every bite.
These fluffy, naturally sweet pancakes are made with wholesome oats, blueberries, apple and a hint of cinnamon. No eggs, dairy, oil or added sugar needed, just simple, nourishing ingredients.
Ingredients:
- 1 cup rolled oats
- ½ cup unsweetened applesauce or 1 small apple, blended until smooth
- ½–¾ cup water, adjusting as needed
- ½ cup fresh or frozen blueberries
- ½ tsp cinnamon, or to taste
- ¼ tsp vanilla powder (optional)
Method:
1. Blend the oats into a fine flour.
2. Add the applesauce (or blended apple), water, cinnamon and optional vanilla powder. Blend until smooth, adding more water if needed to achieve a thick but pourable batter.
3. Gently fold in the blueberries.
4. Heat a good non-stick pan over low to medium heat. Spoon in small portions of batter to form pancakes.
5. Cook for 2–3 minutes, until bubbles appear and the edges begin to set. Carefully flip and cook for another 1–2 minutes, until cooked through.
To serve
Enjoy warm with extra fresh blueberries, sliced apple, or other fruit, cinnamon or a little homemade applesauce.
A little nourishment note
Oats provide fibre, apples bring natural sweetness, and blueberries add colour and antioxidant-rich goodness. Simple, wholesome ingredients can make a beautiful breakfast or snack!
Tip: If you want softer, fluffier pancakes, use applesauce. If you use a freshly blended apple, the batter may need a little less water depending on how juicy the apple is. Start with ½ cup and adjust gradually.

Thank you for being here. Here's to nourishing your body, restoring your vitality, and embracing a life of vibrant health. Until next time, stay well.
With love,
Eva
