There’s something so comforting about the combination of pumpkin and warming spices. These soft, fluffy pumpkin spice pancakes are a delicious way to bring a little extra goodness to your breakfast, using simple, plant-based ingredients without the need for added oils.

Made with oats, naturally sweet pumpkin, cinnamon, cardamom, nutmeg and a hint of ginger, they’re full of beautiful flavour and are easy to prepare.

Whether you're enjoying a slow morning at home or looking for a simple breakfast to share with the family, these pancakes are a lovely reminder that nourishing food can be both simple and delicious.

Ingredients:

- 1 cup (120 g) rolled oats or gluten free oats, blended into oat flour

- ½ cup (120 g) cooked pumpkin, mashed

- ½ cup (120 ml) water or homemade oat milk

- ½ tsp ground cinnamon

- ¼ tsp ground cardamom

- A pinch of ground nutmeg

- A pinch of ground ginger (optional)

- ½ tsp alcohol-free vanilla extract

- 1–2 tsp maple syrup (optional)

- ½ tsp baking powder (optional)

Instructions:

1. Prepare the pumpkin

Steam or boil the pumpkin until soft. Drain well, mash and allow it to cool slightly.

2. Make the batter

Blend the oats into a fine flour. Add the mashed pumpkin, water or oat milk, cinnamon, cardamom, nutmeg, ginger, vanilla and optional maple syrup and baking powder.

Blend until smooth. If the batter feels too thick, add a small splash of water.

3. Cook the pancakes

Heat a good-quality non-stick pan over medium-low heat.

Spoon the batter into small pancakes, gently spreading each one. Cook for approximately 2–3 minutes, until the edges begin to set and the pancakes are easy to flip.

Flip and cook for another 1–2 minutes, until cooked through.

4. Serve & enjoy!

Serve warm with a sprinkle of cinnamon, a little maple syrup or your favourite fruit.

Make them your own

- Add a little extra cinnamon or cardamom for a more aromatic flavour.

- Blend in some mashed apple for extra natural sweetness (if you add apple you need to use less water)

- Serve with stewed apples or berries for a fruity topping.

- Make a batch ahead of time for an easy breakfast or snack.

Sometimes, the simplest ingredients can offer so much goodness.

Pumpkin is rich in beta-carotene, a plant pigment that the body can convert into vitamin A. Vitamin A plays an important role in supporting normal vision, immune function and the health of our skin and tissues.

Oats provide complex carbohydrates for energy and beta-glucan, a type of soluble fibre that supports digestive health and can help maintain healthy cholesterol levels.

Cinnamon, cardamom, nutmeg and ginger bring more than beautiful flavour. These aromatic spices contain naturally occurring plant compounds, including polyphenols, that contribute to the diversity of plant compounds in our diet.

Remember:

Nourishing yourself doesn't have to be complicated. Sometimes, caring for ourselves starts with something as simple as a homemade breakfast, made with a little love.

I hope you love these as much as we do!

Thank you for being here. Here's to nourishing your body, restoring your vitality, and embracing a life of vibrant health. Until next time, stay well.
