Homemade Oat Pudding (Vanilla & Chocolate)

There's something special about making food from scratch. This homemade oat pudding begins with one of the simplest ingredients, whole rolled oats. Rather than using store-bought oat milk, this recipe starts by soaking and blending the oats to create fresh homemade oat milk, resulting in a pudding that's creamy, wholesome and free from unnecessary additives.
Naturally fat-free, light and made from simple whole-food ingredients, it's a satisfying dessert or snack that feels indulgent without being heavy. Oats are a wonderful source of soluble fibre, particularly beta-glucan, which has been shown to support heart health, nourish the beneficial bacteria in the gut and help keep you feeling satisfied. Soaking the oats before blending helps soften them, creating a smoother, creamier milk and pudding.
If you use certified gluten-free oats, this recipe is also suitable for those following a gluten-free diet.
Whether you choose the comforting vanilla version or the naturally rich carob variation, this pudding is a nourishing dessert or snack that's simple to make and delicious to enjoy.
Ingredients:
1 cup rolled oats
2 cups water
Vanilla Pudding
Fresh oat milk (prepared above)
1 vanilla bean, seeds scraped (or 1 teaspoon vanilla powder)
Pure maple syrup, to taste
Chocolate (Carob) Pudding
Fresh oat milk (prepared above)
2–3 tablespoons carob powder (adjust to taste)
Pure maple syrup, to taste

Method
Soak the oats in 2 cups of water for 30 minutes.
Blend until smooth.
Pour the mixture through a cheesecloth or nut milk bag, squeezing well to extract the oat milk.
Pour the fresh oat milk into a saucepan.
For the vanilla version, add the vanilla bean seeds and maple syrup.
For the chocolate version, whisk in the carob powder and maple syrup.
Cook over low to medium heat, stirring continuously to prevent sticking. Continue cooking for approximately 8–12 minutes, or until the pudding thickens.
Pour into serving bowls or jars and allow to cool. Refrigerate for a few hours for an even thicker, creamier pudding.
Serving Ideas
Enjoy as it is, or top with fresh berries, sliced banana or mango, chopped dates, cinnamon or a sprinkle of coconut flakes for extra flavour and nourishment.
