No-Bake Carob Energy Balls

These sweet, no-bake energy balls are the perfect snack when you’re in a rush but still want something healthy and delicious. Packed with nutritious ingredients, they come together in minutes and provide the perfect crunch. Whether you enjoy them as a quick breakfast, an on-the-go snack, or a pre/post-workout boost, these energy balls will keep you feeling fueled and satisfied!
You can store in an airtight container and refrigerate for up to 2 weeks!

Ingredients:
1 cup activated buckwheat
1/3 cup pitted Medjool dates
2 tablespoons Grade A maple syrup (optional, for sweetness)
1 teaspoon cinnamon powder
1 tablespoon carob powder
2 tablespoons water
Directions:
Blend the Ingredients: Place all ingredients into a food processor or high-speed blender. Blend on high until the mixture is well combined and forms a dough-like consistency.
Chill the Dough: Transfer the dough to the fridge and chill for about 30 minutes.
Shape into Balls: After the dough has chilled, remove it from the fridge and roll it into small, bite-sized balls.
Alternative Option: If you prefer bars, simply press the dough into a parchment-lined baking sheet and cut it into bars once it’s set.
